Canadian summers mean one thing to me…an abundance of berries! Here in Quebec, we are blessed with bounties of blueberries, raspberries, blackberries, and of course strawberries. Out of the ladder, raspberries are at the top of my list, followed by a tie of the others. I love eating them just as nature made them, but also love to cook and bake with them. Just like butter and maple syrup, I like to put them in everything! LOL! I’ve tried to narrow our favorites down to our top strawberry recipes.
When we went strawberry picking earlier this week, we came home with baskets overflowing with delicious, red, ripe, and sweet berries. The kids immediately asked me to bake something. I asked them to each choose one strawberry thing they wanted to add to our top strawberry recipes.
Strawberry Shortcake
The first to top the kid’s list was of course a strawberry shortcake. It’s a favorite in our house and with all the rage of naked cakes, it removes the stress of trying for a perfect finish. The look of a naked cake, in my opinion, is so stunning! It’s such a perfect summer cake. You could always switch out the strawberries for any other berry you love. Strawberry Milkshake Popsicles
The second to make it on our top strawberry recipes was of course strawberry popsicles. The ultimate summer treat isn’t it? I don’t know if you can tell, but I love the combo of berries and cream. They just pair perfectly together. When I suggested strawberry milkshake instead of just strawberry popsicles to the kids, they went nuts! They waited by the freezer for them to be ready lol. Berry Tarts
The next one to make our top strawberry recipes, was berry and custard tarts. These are one of my favorite desserts. I will usually keep frozen tart shells in the freezer ready to make these. The tarts are a little time-consuming, but the custard can be made in minutes, plus cooling time. Our raspberry bushes are full of berries right now, so I couldn’t resist adding these to the tarts. Strawberry Lemonade
Another delicious summer treat for scorching days is lemonade! My older son requested this one. We love regular lemonade, but whenever we head to Wendy’s, I always get the strawberry lemonade. So when he asked me to recreate it, I was totally on board. Homemade lemonade is so simple to make at home and the kids think it’s such a special treat. Arugula-Strawberry Salad
The last recipe to make the list was obviously my choice lol. My kids would definitely not pick a salad! This is my favorite summer salad.
