Strawberry Milkshake Popsicles

Is there anything more delicious than an old-fashioned milkshake? Deep down I wish I would have been alive in the 50s. Going out to the dinner with my boyfriend to share a milkshake (insert heart eyes) I can only imagine how delicious those milkshakes must have been. What flavor would I have been drinking? Probably a classic…either vanilla, chocolate, or strawberry. There’s something about berries and cream that I can not resist. Strawberry shortcakes, crepes with whipped cream and strawberries…Yuuum! When my kids asked me to make popsicles when we came back from strawberry picking, I knew I was gonna make strawberry milkshake popsicles.

Popsicles are a summertime staple in our house. Sure we buy some, but there’s something extra special about making your own. The kids love choosing or making up flavors to freeze up. The kids hope every morning that daddy won’t drink his smoothie so they can freeze it lol. There’s no shortage of adorable molds you can find nowadays. However, we simply use the good old IKEA ones. I love that they can be taken out of the base one at a time without having to wet the whole mold. This recipe made exactly 6 of those.

Serving them on ice will keep them from melting too fast.

For this recipe, we simply prepared the mix and poured it into the molds. But if you wanted an extra fluffy and smooth texture, and you happen to have an ice cream maker…aaaand patient children, you could pop it into there till it starts to freeze before pouring it in.

Delicious strawberry milkshake popsicles!

For the strawberry milkshake popsicles, we placed our fresh, juicy strawberries in the blender, with cream, sugar, and vanilla. The kids like the popsicles with strawberry chunks, so we didn’t blend them too much. If you prefer a smooth pop, blend till no large pieces remain. Here are some other great cream flavor combos you could try: raspberry, blackberry, and peach are my favorite.

Strawberry Milkshake Popsicles

Hot summer days were made for these sweet frozen treats.
Servings 6 Popsicles

Ingredients
  

  • 1 c. Whole Strawberries
  • 1/2 tsp. Lemon Juice
  • 1/3 c. Sugar
  • 1 c. 15% Cream
  • 1 Tbsp Honey
  • 1/2 tsp. Vanilla Extract

Instructions
 

  • Put all ingredients into a blender.
  • Blend till you've reached desired consistency.
  • If you have an ice cream machine, you can churn the mix to aerate before pouring it into the molds. If not skip that step and pour the liquid directly into the molds and pop in the freezer till set.
  • Remove from molds and enjoy!
