Oatmeal Apple Cookies

There still may be a month left till summer break is over, but I’m already in fall mode. Fall is my favorite season of all! The cooler crisp air, the way nature turns into a beautiful colored canvas, and of course apple picking. We love to pick all sorts of fruit! But berry picking in the grueling summer heat isn’t the greatest. In comparison, the temperature is much cooler when fall rolls around, and it’s apple picking time. When mid-September comes around, we head to the orchard and bake all the apple things we can think of afterward. One of the kid’s favorites are oatmeal apple cookies.

All the fall smells!

We are big on cookies in our house. So in turn, we try and add things that make us feel like they’re a little healthier lol. I will often add oatmeal and fruit or veggies to a lot of my baked goods. This helps me think I’m not giving my kids junk. Oatmeal-zucchini cookies, any kind of crisp, oatmeal muffins, and oatmeal pancakes are all things we love. I started making these oatmeal apple cookies when my 2 older ones were small. I’d always bake something to bring to our playgroup. These cookies were a big hit with all the tiny hands. You can use whichever apples you have on hand to make these. But, my favorite is Granny Smith, they hold their shape well when baked.

Loaded with cinnamon, these cookies taste like apple pie.

These cookies would make a great treat to add to school lunches, or as an afternoon snack with homework. They are so quick and easy to make! The longest process is just chopping up the apples into tiny bits.

Oatmeal Apple Cookies

These delicious cookies just scream fall! Perfect for an afternoon snack or school lunches.

Ingredients
  

  • 1/2 c. Softened Butter
  • 1/2 c. Brown Sugar
  • 1/4 c. White Sugar
  • 1 Egg
  • 1 tsp. Vanilla Extract
  • 1 Apple
  • 1 1/4 c. All-Purpose Flour
  • 1 1/2 tsp. Ground Cinnamon
  • 1/4 tsp. Ground Nutmeg
  • 1/2 tsp. Baking Soda
  • 1/4 tsp. Salt
  • 1 1/2 c. Old-Fashioned Oats

Instructions
 

  • Peel and chop the apple into tiny pieces.
  • In a bowl, cream together butter, brown sugar, and white sugar.
  • Add egg and vanilla, mix well.
  • In a separate bowl, whisk together flour, cinnamon, nutmeg, baking soda, and salt.
  • Add to wet ingredients and mix.
  • Add chopped apples and oats, mix well.
  • Refrigerate the dough for at least 30 min.
  • Preheat oven to 350*F
  • Scoop dough into prepared cookie sheet and bake for approximately 13-15 minutes until golden brown underneath.
  • Cool on a cookie rack and enjoy.
All those tiny morsels of apples.
