Oatmeal Apple Cookies
These delicious cookies just scream fall! Perfect for an afternoon snack or school lunches.
- 1/2 c. Softened Butter
- 1/2 c. Brown Sugar
- 1/4 c. White Sugar
- 1 Egg
- 1 tsp. Vanilla Extract
- 1 Apple
- 1 1/4 c. All-Purpose Flour
- 1 1/2 tsp. Ground Cinnamon
- 1/4 tsp. Ground Nutmeg
- 1/2 tsp. Baking Soda
- 1/4 tsp. Salt
- 1 1/2 c. Old-Fashioned Oats
Peel and chop the apple into tiny pieces.
In a bowl, cream together butter, brown sugar, and white sugar.
Add egg and vanilla, mix well.
In a separate bowl, whisk together flour, cinnamon, nutmeg, baking soda, and salt.
Add to wet ingredients and mix.
Add chopped apples and oats, mix well.
Refrigerate the dough for at least 30 min.
Preheat oven to 350*F
Scoop dough into prepared cookie sheet and bake for approximately 13-15 minutes until golden brown underneath.
Cool on a cookie rack and enjoy.
