Blueberry Oatmeal Muffins

If you’re new here, let me introduce myself…Hi, I’m Elisa, and I’m addicted to baked sweets! No wonder I chose to go into baking as a career. Not only do I love eating goodies from my kitchen, but I love making them for others. Bringing someone a basket of freshly baked muffins makes me so happy! Summer comes with such an abundance of sweet, juicy fruit to bake into delicious treats. These blueberry oatmeal muffins are a family favorite in our house.

Although I love baking with fresh fruit when in season, we have such great quality frozen fruits nowadays, that you can bake these blueberry oatmeal muffins at any time of the year. I love adding oats to cookies and muffins to make them more filling and to make myself think they’re healthier lol. These would make a great snack for school lunches, an afternoon snack, or our favorite for homeschooling…with poetry tea time.

Perfect summer muffin.

This recipe makes 12 muffins, but you can easily double the recipe to make 2 dozens. With my 4 kids, this was one serving lol. Whenever I bake anything my little monkeys devour it in minutes! Good thing my husband doesn’t like baked goods. I think it’s the one thing that keeps me from baking every day.

Wild blueberries make the sweetest muffins.

If you have buttermilk on hand, go ahead and use that instead of the milk and vinegar. I’m sure it’s not something everyone has on hand, so for this recipe, I used whole milk and vinegar to add a little tang to these muffins. If you do not like crumble topping, then by all means omit it! I don’t add to all my muffins, but the kids love it when I do.

Blueberry Oatmeal Muffins

Great snack for school lunches or tea time.
Servings 12 Muffins

Ingredients
  

Muffins

  • 1/3 c. Butter
  • 1/3 c. White Sugar
  • 1/4 c. Brown Sugar
  • 2 Eggs
  • 2 tsp. Vanilla Extract
  • 1/2 c. Whole Milk
  • 1 tsp. White Vinegar
  • 1/4 c. Plain Yogurt
  • 1 c All-Purpose Flour
  • 3/4 tsp Baking Soda
  • 1 tsp Baking Powder
  • 1/2 tsp. Salt
  • 3/4 c. Old Fashioned Oats
  • 1 1/2 c. Frozen Blueberries
  • 1 Tbsp. All-Purpose Flour

Crumble

  • 3 Tbsp. Brown Sugar
  • 3 Tbsp. Old Fashioned Oats
  • 1 tsp. Ground Cinnamon

Instructions
 

  • Preheat oven to 375*F
  • Prepare muffin tins with liners.
  • In a small bowl prepare the crumble topping. Mix together the brown sugar, oats, and cinnamon. Set aside.
  • In a larger bowl whisk together flour, baking soda, baking powder, salt, and oats. Set aside.
  • In a separate bowl, with a hand mixer, cream butter and sugars together. Add in one egg at a time, mixing between each. Add vanilla, milk, vinegar, and yogurt combining well.
  • Add dry ingredients, and with a spoon, mix together till only a little flour remains.
  • In a small bowl, toss frozen blueberries with 1 Tbsp. of flour. Fold blueberries into the mix.
  • Scoop mix into prepared muffin tin and sprinkle with crumble topping.
  • Bake in preheated oven for 20-25 min.
  • Enjoy!
