Blueberry Oatmeal Muffins
Great snack for school lunches or tea time.
Muffins
- 1/3 c. Butter
- 1/3 c. White Sugar
- 1/4 c. Brown Sugar
- 2 Eggs
- 2 tsp. Vanilla Extract
- 1/2 c. Whole Milk
- 1 tsp. White Vinegar
- 1/4 c. Plain Yogurt
- 1 c All-Purpose Flour
- 3/4 tsp Baking Soda
- 1 tsp Baking Powder
- 1/2 tsp. Salt
- 3/4 c. Old Fashioned Oats
- 1 1/2 c. Frozen Blueberries
- 1 Tbsp. All-Purpose Flour
Crumble
- 3 Tbsp. Brown Sugar
- 3 Tbsp. Old Fashioned Oats
- 1 tsp. Ground Cinnamon
Preheat oven to 375*F
Prepare muffin tins with liners.
In a small bowl prepare the crumble topping. Mix together the brown sugar, oats, and cinnamon. Set aside.
In a larger bowl whisk together flour, baking soda, baking powder, salt, and oats. Set aside.
In a separate bowl, with a hand mixer, cream butter and sugars together. Add in one egg at a time, mixing between each. Add vanilla, milk, vinegar, and yogurt combining well.
Add dry ingredients, and with a spoon, mix together till only a little flour remains.
In a small bowl, toss frozen blueberries with 1 Tbsp. of flour. Fold blueberries into the mix.
Scoop mix into prepared muffin tin and sprinkle with crumble topping.
Bake in preheated oven for 20-25 min.
