Let’s face it, we’re all trying to be healthier. The older we get, the harder we try. I’m not gonna lie, I love food, and don’t always eat healthy LOL! But I do my best, for myself and really for my children. I can’t remember how this recipe for chicken BLT wrap came about one summer day, but my kids think they are so fun.
I don’t know about your kids, but mine love wraps! A lettuce wrap?! Just because I added the word wrap in there they were willing to try it. I use Boston lettuce because they naturally have a cupped shape. If your kids absolutely refuse to eat these in a lettuce wrap, by all means, use little tortillas.
Everything in this chicken BLT wrap recipe can be made ahead of time to give you a quick lunch. BBQ your chicken the night before, make your dressing in advance, dice the tomatoes, wash your lettuce, and cook your bacon.
Grilling the Chicken.
The seasoning I use here is my go-to for BBQ chicken. I drizzle with olive oil and rub the seasoning on the chicken breast before tossing it on the flames. If I weren’t using it for this recipe, I would drizzle it with lemon and olive oil when it came off the BBQ. Along with some grilled veggies, a Greek salad, and some naan. Yummy dinner!
I always butterfly my chicken to cook on the BBQ. Doing so makes it cook way faster, and in turn, ensures a juicy chicken breast instead of an overcooked dry one. All you need is an internal temperature of 165*F for it to be safe to eat. Always allow your meat to rest before cutting to seal in its juices.
Ranch Dressing.
Now, this is a quick makeshift ranch dressing. I use this recipe as a veggie dip all the time. It’s so quick to make and I usually have all the ingredients on hand. You can always make this with fresh herbs, but unless my garden is blooming full of goodness in the summer months, these dry herbs are always in my pantry.
If I’m making this recipe for a dip I will double it as my kids clear it out in no time. It’s so easy to make, just toss all the ingredients in a bowl and mix. If you wanted to use it as a salad dressing, I would add more milk and a little vegetable oil.
BLT Wrap Toppings.
As for the toppings, the bacon and tomatoes can also be prepared the day before. Sizzling up the bacon in slices, then chopping up when cool. Make sure you cook up some extra for those sneaky little hands. The tomatoes aren’t safe in my house either LOL! You can dice them into little cubes.
Now you’re all ready to go. There’s no rule to follow for the order of assembly. You can do chicken first, followed by dressing, then toppings. Or dressing first, followed by everything else.
Chicken BLT Wraps
Ingredients
Chicken
- 2 Chicken Breasts
- 1 Tbsp. Olive Oil
- 1/2 tsp. Granulated Garlic
- 1/2 tsp. Granulated Onion
- 1/2 tsp. Dried Oregano
- 1/2 tsp. Paprika
- 1/2 tsp. Salt
- 1/4 tsp. Black Pepper
Ranch Dressing
- 1/3 c. Sour Cream
- 1/3 c. Mayonnaise
- 1 Tbsp. Milk
- 1/2 tsp. Granulated Garlic
- 1/2 tsp. Granulated Onion
- 1/2 tsp. Dried Parsley
- 1/4 tsp. Dried Oregano
- 1/4 tsp. Dried Basil
- 1/4 tsp. Salt
- 1/4 tsp. Lemon Juice
- 1/8 tsp. Black Pepper
Toppings
- 1 head Boston Lettuce
- 2 Fresh Tomatoes
- 1 c. Bacon Bits
Instructions
Chicken
- Mix garlic, onion, oregano, paprika, salt, and pepper together in a small bowl.
- Coat chicken breasts in olive oil then sprinkle with seasoning.
- BBQ on medium-low heat till internal temperature reaches 165*F
- Let rest for 5 minutes then dice into small pieces.
Ranch Dressing
- Combine all ingredients in a bowl and mix well.
Toppings
- Separate, wash, and dry Boston lettuce leaves.
- Dice tomatoes into small cubes.
- Cook bacon till crisp, then chop into small pieces.
Assembly
- Place a lettuce leaf on a plate. Add chicken, dressing, tomatoes, and bacon.
- Fold gently and support with hand to eat!
- Enjoy!
