Healthy Macaroni and Cheese
There's nothing like some homemade comfort food! This mac'n cheese is so quick and easy to make! Guaranteed to be your go-to comfort food.
- 2 Tbsp Butter
- 2 Tbsp All Purpose Flour
- 1/4 tsp Dry Mustard
- 1 tsp Salt
- 1 c Milk
- 2 c Grated Cheddar Cheese
- 1/3 c Butternut Squash Puree
- 3 c. Elbow Macaroni
Squash Puree
Peel and chop the butternut squash.
Place in a pot. Add about 1 inch of water to the pot. Bring to a boil, and cook till tender. Stain water out.
Once a little cool, place the squash in a blender. Add a tiny bit of water, and blend till you get a smooth puree.
Macaroni & Cheese
Cook pasta according to the directions on the pack.
In a saucepan, place the butter, flour, dry mustard, and salt. Set stove to medium and with a whisk, mix till bubbly.
Slowly add milk while whisking. Continue to mix till you get a thick sauce.
Add squash puree, then cheese.
Pour sauce over cooked pasta, mix, and serve immediately.
