Healthy Macaroni and Cheese

There's nothing like some homemade comfort food! This mac'n cheese is so quick and easy to make! Guaranteed to be your go-to comfort food.

Ingredients
  

  • 2 Tbsp Butter
  • 2 Tbsp All Purpose Flour
  • 1/4 tsp Dry Mustard
  • 1 tsp Salt
  • 1 c Milk
  • 2 c Grated Cheddar Cheese
  • 1/3 c Butternut Squash Puree
  • 3 c. Elbow Macaroni

Instructions
 

Squash Puree

  • Peel and chop the butternut squash.
  • Place in a pot. Add about 1 inch of water to the pot. Bring to a boil, and cook till tender. Stain water out.
  • Once a little cool, place the squash in a blender. Add a tiny bit of water, and blend till you get a smooth puree.

Macaroni & Cheese

  • Cook pasta according to the directions on the pack.
  • In a saucepan, place the butter, flour, dry mustard, and salt. Set stove to medium and with a whisk, mix till bubbly.
  • Slowly add milk while whisking. Continue to mix till you get a thick sauce.
  • Add squash puree, then cheese.
  • Pour sauce over cooked pasta, mix, and serve immediately.
