Arugula Salad with Strawberries and Feta.
Bright and fresh salad perfect for spring or summer meals.
Salad
- 3 c. Arugula
- 1 handfull Strawberries
- 1 cubic inch Greek Feta
- 2 Tbsp. Pine Nuts
Poppy Seed Dressing
- 2 tsp. Honey
- 1 1/2 tsp. Apple Cider Vinegar
- 1/2 tsp. Dijon Mustard
- 1 tsp. Mayonaise
- 2 Tbsp. Olive Oil
- 2 Tbsp. Canola Oil
- 1 tsp. Poppy Seeds
- Salt & Pepper to taste
Toast pine nuts in a pan at low heat till fragrant and golden.
Place arugula in a bowl. Slice strawberries and add to bowl.
Crumble the feta and sprinkle it on top of the salad. Add the toasted nuts.
Whisk together all ingredients for the dressing till smooth.
Drizzle dressing atop the salad.
